if it helps any the grill where i work part time is a APW wyoff table top propane unit. it has the lava rocks. it is pretty much "yahoo proof" (was kidding the owner the other day we should install a revolving door with all the yahoos coming and going. seems bbq is too much like work) at any rate it has held up well under the conditions. no repairs required in over a years hard work. i think restaurant equippers carries them at a good price.

Steave i would recomend Cookshack it cooks eavenly and give a great wood fired taste.. goo luck with opening your resturant..
