Cold Smoking in FEC-100?

I have cold smoked cheese with it. Works great!

There is an air passage from the intake through the air duct and into the air holes in the fire pot, so I think you'll find that the airflow will be great enough to keep the tube smoking, even with the fan off.

If you run into trouble, try laying the tube across the fire pot.

No adjustment is required.

I don't have a FEC-100 but on my other cookshacks when I am cold smoking I just run a house fan on low about 7 feet from the smoker. This creates air movement over the top of the unit and causes the air to be drawn in from underneath. This proved helpful from the smoke staying inside too long and getting that over smoked flavor.

No problem cold smoking in the FEC with the tube smoker. Did get a little warm a few times though.

That's exactly what I intend to do, and I have my 12" tube loaded and ready to go!

I might try adding a deep hotel pan filled with ice to see if that helps keep ambient temps down.
