Join us for the 2010 Fast Eddy's Championship Cooking Class for Restaurateurs on Monday-Tuesday, July 26-27th in Ponca City, OK. This class will be taught by Cookshack President and CEO, Stuart Powell, Ed "Fast Eddy" Maurin, and David Bouska. They will be teaching competition cooking techniques that will have your customers coming back for more of your delicious smoked foods. Sessions will cover smoke-cooking, grilling, holding, re-thermalization/re-heating, setting up a buffet, plating and presentation, etc. This class is ideal for restaurant owners, caterers, and chefs, or anyone who is interested in entering the restaurant or catering industry. New and experienced users alike will benefit from this class.

Class Schedule:

Monday: Beginning at noon with lunch and introductions. Preparing, cooking, and serving brisket and pork butt. Dinner with Cookshack at 6:00 p.m. Enjoy a whole hog, turkey, steak, shrimp, sides, and dessert prepared and served by Cookshack.

Tuesday: Beginning at 8:00 a.m. with breakfast. Preparing, cooking, and serving pork ribs, chicken thighs, chicken breasts, and whole chickens. Setting up a serving a buffet at noon. Preparing, cooking, and serving salmon, tilapia, and hot links. Break from 4:00-5:00 p.m. Serving a plate dinner at 6:00 p.m.

The cost of this class is $750. This includes hotel accommodations on Monday and Tuesday nights; lunch and dinner on Monday; breakfast, lunch, and dinner on Tuesday; all cooking supplies and meat; tour of the Cookshack manufacturing facility; and a Fast Eddy's tote bag filled with the following: monogrammed Fast Eddy's by Cookshack class apron, Cookshack Barbecue Sauces (Mild and Spicy), Cookshack Brisket Rub, Cookshack Spicy Chicken Rub, Fast Eddy's Championship Seasoning, Taylor TruTemp meat thermometer, Black Angus Pro Chef's Knife engraved with Cookshack name, binder with class recipes and blank paper and pen for taking notes, tongs, fork, and pastry brush. All you need to do is get yourself to Ponca City and bring an appetite for learning and tasting some delicious smoked foods! Remember, this is an intensive hands-on class. On Monday, we will be at the New Creation Christian Fellowship building. Tuesday, we will be in an actual commercial kitchen at the Ponca City Country Club. You will be preparing and serving a buffet lunch and plate dinner to members of the club.

The best thing I have learned from the Cookshack courses ,over the years,is that pros from all over the world show up.

CS doesn't talk "down" to you,but it is totally interactive.

You spend your time WORKING with all the visiting pros,CS shares the things you can develop together ,and you have a lifetime of contacts to grow with.

They share a half century of international info/contacts and share all they can.

You'll be calling these folks,the rest of your pro career.

Stuart,and Smokin' will feed you enough to pay for the trip. Big Grin

They aren't making money from you-they are giving up funds to build the network,which is what they have been about for a half century.

Stuart,Fast Eddy,and Smokin'Okie,sat at dinner and pointed out to us which of us would go onto international/national prominence and darned that if they didn't call it exactly.

All of us have followed the plan,and we have met the expectations. Smiler
