I continue to have problems with extreme temperture overshoot on my FEC100. I've tried starting well below the target temp and slowly ramping up but that is not working as well as it once did. Also, the unit does not seem to function well at lower temperatures. I'm trying, as we "speak," to smoke some sausage at 180 degrees. I have the temp set to 150 degrees but it doesn't want to settle below 190. Any suggestions?

There does seem to be problems with "some" units all with varying degrees of dissatisfaction.
Some of the things I have tried …
First be sure the smoker is seasoned good and you have had several cooks.
Clean fire pot before every use.
Do not use any elbows or pipes on the exhaust
Be sure the fan is running at different speeds
Cook out of the wind
And mine does seem to cook better when full of meat.

For the record, I don't think you can make that statement. If someone really wants to do this I would suggest a call or email to CS. They'll be the ones to decide.
