I ran across this after reading Cook's Illustrated. They love the basic model w/o replaceable probes but this one may be the best bet for long term use: http://www.thermoworks.com/products/thermapen/thermapen_3_7.html

I'm sick of various probes dying after a dozen uses. If this had a remote it would be perfect. Check out the probe near the bottom of the page for Smoke House armored.

I have the superfast thermapen and love it, but more for the grill than the smoker. It is a good final check when smoking, but you have to open the door to use it.

Now when you are grilling, pan frying, or oven roasting a steak or chop, stick the probe in, wait three seconds and you have an accurate reading. My favorite way to ensure medium rare steaks, as I don't cook enough beef to learn that finger touch method.
