What about pizza...and especially cheese enchiladas.
Here's my recipe for Enchiladas:
I won't go into the general ench techniques, as these are well known..but...I add about 2 tbs brown sugar to my ench sauce before dipping tortillas. The sweet really goes with the spicey hot flavor. Also, I mix 2 parts cheese with 1 part white sweet corn kernals for the 'guts' of the enchilada. It adds texture to a somewhat gooey entree.
While I'm at it, here's my Margarita recipe(this was how John Wayne made his, according to a good source)
1 can frozen limeade
using the empty limeade can as a measure...
1 can water
1 can Triple Sec
1 can Tequila
Everyone who has these margaritas insists they are the best ever, and they're easy to make ahead of time.
