Has anyone ever cooked cornbread in an FEC500. I have a wedding to do where I have to cook for 115 people. I have a recipe but it requires cooking at 425 deg. I have never had the temp that high. Was wondering if I cooked it at 350 that it would come out. Or can I get the 500 up that high in temp.

Sorry Big Pappa,
I haven't been on here for some time. Been busy with catering, feeding the troops at Ft. Bragg and smokin' turkeys.
I actually cranked up my smoke to 350-375 and baked 3 full pans of corn bread and it came out okay. Would have liked it alittle more moist. If anyone knows how to make it more moist let me know. It was good but I like it a bit more moist.
As a side note to help anyone in the future.
Been using my FEC500 so much I have an igniter going out. The contactor was chattering one day and made me take notice. I called Billy at CookShack and he is sending me a new ignitor. He said that was one symptom of an ignitor about ready to go. Good service.
