I rarely use the FEC100 probe or probe mode when smoking. Just loaded a pork butt, set the smoker for probe mode and inserted the probe into the butt.

The initial probe temp read was 75o vs 37o from my Maverick. Is 75 the initial read out when using the probe? I'll keep on eye on both the Maverick and probe temps...just was curious.

Another oddity...about 20 minutes after starting the smoker, both the Maverick and board smoker temps were 118. I heard pellets dropping but no smoke was being produced. Opened the door and the firepot was full of pellets. Emptied the pot and restarted in cook mode. Everything's fine now.

Just to be sure I had the ProbeMode set correctly, what I did was:

Hit the start rocker switch.

Attached the probe to the socket...I have the newer 2 pin.

Placed the probe end in the PB.

Pressed Mode and the up arrow to go from Cook to Proble Mode

Set the probe temp to 190.

Set the hold temp for 140.

Set the cook temp for 240.

Set the time to 12:00 hrs though I assume this isn't needed in probe mode...is it?

Did I miss anything?

It was great. I injected with AJ, H2O, Worcestershire and pulverized The Slabs "Birds & Bones" (rub/sauce exchange) Used the same to season. Great bark and very moist meat.

I used the same pellets 2 weeks before when I smoked a brisket...no issues. The only thing I can think of is wind may have played a part. I normally use a 2' flue extension, which I removed the morning of the PB smoke.
