There are a lot of varibles that determine when the wood will start smoking. If the oven is fairly full with cold meat, the wood will smoke with the thermostat set at 140 degrees. If the oven is empty it is probably more in the 180 range.

What are you thinking about smoking at low temperatures? There is a cold smoke kit for the model 50 if you need to smoke at low temperatures.

OK, this is what I was trying to figure out after reading Cookshack's recipe for "Great Lox" that appears in their catalog and where they specify setting the temperature at 100 degrees.
There is no mention of using a cold smoke kit, so I could not understand how the wood would start smoking at that temperature.

To summarize; if I understand correctly regarding the Cookshack "Great Lox Recipe"(I am referring to the recipe that appears in the Cookshack sales catalog), it should be done with the "Cold Smoke Kit" in place and smoke would be generated with the thermostat set at 100 degrees. Is that correct?
