I don't know that I've had ash on the meat, but my fan (after it didn't work at all) now will not shut off when I open the door. That makes for a windy environment and some stuff gets blown around. Again, not sure that it's ash, but it's something. Does your fan shut off when you open the door like it's supposed to?
My fan does not shut off when I open the door on the FEC 100. I guess the 120 has the firepot access area and may be designed to shut off. Call Bill at cook shack, he'll fix you right up.
on my FEC 100, I get some ash on the meat with some kind of pellets. If I use fruitwood or mesquite, I get a lot more ash. Also, I tried heater pellets one time and they had a lot more ash. I use BBQ delight now and hardly any ash and none visible on any of the meat.
Don't really have a problem with ash. But I've noticed the current bag I'm using, Lumberjack OHC (Oak, Hickory, Cherry) produces a ton of ash. I usually clean out every 2 - 3 cooks, but with these pellets, I need to clean out after every cook. The firepot and the bottom of the smoker is filled with ash.
These pellets seem to produce 2-3 times as much ash as other Lumberjack pellets. Thankfully, this bag is almost used up, probably one more cook left.
