wow All I can say is that Cookshack Smokers rock. My first Boston Butt was far and away the best I've ever done. Took everyones advice and kept a very detailed log (even noted the barometric pressure!). Long story short: 6 and half pound Smithfield BB, 225 for almost 13 hours. Took it out to rest at 191 internal and used Smokin's moppin sauce to dress it up after I pulled it. Again, WOW!Thanks to all forum posters that I've been reading.
