Well...I just got through doing a rack of pork ribs to try out my new Smokette 009 and I have to say I'm glad I decided to keep it.

I did a 3.8 lb. rack at 225 with Cookshack Rib rub, 2 oz. hickory for 3 hrs., sauced and returned for 2.5 hours. Smoked them to 188 deg., foiled, then in the cooler for an hour. They were absolutely perfect.

My wife and I devoured them in record time, and she is very happy I spent the money for this unit, which makes me very happy. Big Grin It had taken me awhile to talk her into this venture.

Could not believe the ease of smoking with the Smokette. No constantly opening to check the water pan, no soaking the wood, and the clean up is much, much easier. And it's pretty cold and windy here in New England, but it had no absolutely no affect on this unit or the smoking time.

As a matter of fact, once the ribs came out, I replaced the foil inside, emptied the wood box, threw 3.5 oz. of wood back in, popped an 8 lb. picnic shoulder in, set the temp to 225, and tomorrow as I watch football I'll have a pulled pork sandwich in one hand, and cold beer in the other.
