flavor vs heat pellets

I seen several people mention that they use flavor pellets and not heat pellets. I have always used oak, cherry and hickory. it gives me heat and flavor. Am I missing somethng here?When and why would you use just a flavor pellet.

You can't use heat pellets in a Food Smoker because they have fillers not necessarily good for food -- from what I've been told.

The flavor pellets are the wood pellets you mention -- oak, hickory, cherry, apple, etc.
