I am very amazed by sm150 and for those that are considering a switch from alto sham here are my latest run up notes.
SM150
Optional hood system installed.
Runup load was very light and consisted of 4 pounds of chicken wings and one pound of veal.
Cook temp was set to 275f
Time to temp was 55 mins
Temp over run was 278f and occured at 61 mins.
Under run was 261F and lasted 14 mins
Time back to temp was 8 mins with an overun to 278 that lasted another 7 mins.
Based off of my rather poor math skills this gave an overall margin off .06%
with out a doubt the SM has the finest temp controller i have ever seen in my professional life and i just wanted to post my experiences to help those of you who might considering a new unit
