I am looking to do some local farmers market but according to NH laws we cant cook the food in a "Residential kitchen". It seems that the laws from state to state are about the same on what you can cook in your own house.

How do you caterers cook your food?
Did you lease and set up a comercial kitchen?
Do you lease time from a commercial kitchen?

Any help in this would be greatly welcomed.

Moble carts according to state law also have to use a commissary

I use the great outdoors..have a concession trailer but have the use of a commisary. The way it was explained to me by inspector I can cook (smoke) outdoors. Its no different than goijng to someones house for a party and cooking for them.In fact I got inspected yesterday and she deducted 2 pts because I was cooking outdoors, have a smoker inside but its too hot. But for a catering job you can cook outside just like they do at special events....my .02
We are using a trailer tech 818 custom. The commisary law we have here is the same as yours but you would be amazed at what can be considered a commisary. As long as you are not hooked up to a residental house it can be considered a commisary if you have potable water and a greywater dumpsite. Since we can not store our rig in the restored area where we live we worked a deal with the rv park where we store it that they are listed as our commisary. I know a guy who is renting an abounded carwas (the put a quarter in kind) and they have allowed that. But we both have full refrigeration, freezing and hot water capabilities so i think that is the key aspect.
