im i the process of building a class #4 bbq trailer and the health dept wants me to have seven sinks on this thing .two hand sinks triple dish sink a veggie sink and mop sink has anyone heard of this before or is this just a west coast thing .well they just called and i can get away with having five sinks. thats a little better. me and every body eles is gett ing tired of mexican food around here so i will smell up the streets with bbq i hope it all works out any input on this would be great thanx

Pretty typical. Around here they would let you slide with one hand sink and wouldn't require a mop sink on a trailer, but the triple sink, veg sink, and hand sink are there for sure unless you can convince them that you won't be doing veggies unless pre bagged like slaw mix and such.
Stainless steel sheeting, at least in the hot areas sure looks nice and it won't yellow behind a fryer or other high heat equipment, but I don't even want to think about the price these days.

If it's important to lower your sink count, ask your produce supplier about supplying your taters and green onions. The big food service guys won't do it, but your local produce supply house should be happy to supply whatever you need. I know my suppliers will produce anything I can give them 24 hours notice on.
I have the laws for California and I have to have 3 sinks and one hand sink. The wash sinks have to be big enough to accomodate the largest item I have to wash. That kind of prep is done off site, and only meat is seen cooking.
I use a lot of foil throw away pans.
