I have a model 55 and love it.I'm now going pro,smoked salmon mostly.Have corporate clients actually lining up,after sending out samples.I need to smoke 300-1000 lbs. of salmon,every week.I've looked at the FEC300,FEC500,FEC750.Should I buy used? or go new? If you have one for sale,or can offer advice,it would be greatly appreciated.(Maybe some free samples for the right info)

I really think you need to look at how much do you need to cook per load. And how many loads a day. I have a 500 and it is great. But it likes a full load. When I don't, I use my 100. The larger the cooker the more fuel you will burn. I really think you need to look first at you daily needs.

If the 300 had been out, I would have bought it inplace of the 500. It would have fit my needs better. But I really like both of my FEC's.
