Sup Y'all
First I'll start with a little background as far as my smoken history goes. I started Qing about twenty years ago with a brinks water smoker that was soon regulated to the garage after going all out and purchasing a Pitts And Spitts Off set smoker. As the years went buy I purchased a second Pits And Spitts and started doing a little competitive cooking with the Whoosky River Cookers.
After a few years of that I got tired of the vast amount of work involved and decided I would much rather show up and drop a twenty in the jar and drink beer and eat Q and throw in a little help here and there.
I still love to BBQ but the staying up all night for those twenty hour smokes was getting old....kinda like me. And to make matters worse BBQ on game day(which is my favorite time to cook)is a pain in the butt with the noon kickoffs,and you end up missing parts of the game fooling with the fire.
So here I am.....ordered the SM025 yesterday and I'm patiently waiting it's arrival(OK...not so patiently)
Really looking forward to Q after the game again.
I must admit though...I'm feeling a little guilty here. Like I'm cheating on the BBQ gods or something.
I hope this thing makes such good Q that my feeling of guilt are overshadowed by the fantastic brisky that comes out of it.
Time will tell I suppose....

What's up...

I bought my CS because I had read that they were invented to cook briskets on. What a surprise I got when I cooked my 1st PB, then it was ribs.Yum Yum!

I don't know if I've ever felt guilty cooking on it, but I've wondered a few times why it took so long for me to become WISE enough to cook on one, oh well.

Nothing better then a little sleep at night and knowing that you'll not be in trouble if you wake up a little late the next morning, Yeah I guess that is a guilty feeling....LOL!

Congrats on the purchase!

Actually we hear this pretty often. Don't worry, we're on your side.

Don't empower them to make you feel guilty. It's your money, spend it how you like.

I always find it funny, and even a little bit sad, that ANYONE is made to feel guilty for any purchase they make. Shame on the people that say those things.

Why are there some people that just have to be the BBQ police and declare the right and wrong of BBQ.

There are options, and as I always told my students in class, I don't care what you cook on, I care about you making BBQ that will make YOU and your family happy.

Don't worry about the purchase or those people. We'll help out and it's just another tool in your BBQ arsenal.

Thats what I keep telling myself....I still have my Offset Smoker if I feel like playing with fire.
Which I have to admit,when it gets cold and I have the time,there's nothing I like more then firing up the pre burn pitt and the offset pit and getting all smokey. Something about it satisfies the caveman in me.
But when I want some Q after the game I think this will fit the bill.
One thing I question about the claim of stick burners(which I am at this point)is that the CS makes the meat to moist,when you see set ups designed to HELP with dry meat on a stick burner.
I even designed and built a water tank with a copper coil in the fire box that injected steam into the smoking chamber to help with that exact problem.

Yeah I read that on here. Dont really care for that idea for the same reason I dont with the stick burner.
I'm actually looking forward to finding ways to make the CS work to my liking.
Read about people using an fish tank pump to cycle more air through the CS to reduce moister.
That sounds like it would work,but I would think you might have to add more wood.
As far as the set it and forget it aspect...I dont have a problem checking the pit on occasion,I just hate the constant battle with temp control on a stick burner.
I think the CS will give me that perfect balance of ease of use,and the flexibility to tinker with it a little.
