Don't know how you can do it easy. You'll have to have a smoker, prep kitchen etc off site and hold the food for selling. That will limit what you can and the quality.

There are always options. You'll need to check with the health dept, as they might have different regulations for HD carts and HD carts that sell Q; they'll be all about the holding method and holding temps of the food.
