the fec will get right up there. excluding my chicken fire in the thing the max temp i can verify from an internal probe set dead center in the cabinet was 425f.
the thing also makes killer biscuits.
gives you a good high profit breakfast item that people don't expect.
one big old word of advise. get a french fry grid that will fit into a standard full size hotel pan. when you do chicken use a disposable fullsize hotel,put the grid in that and the chicken on the grid. if you don't do that make sure your fire bottle works cause you are going to have a big ole fun time with it inside of the trailer. if a fire does occur here's what worked for me (thank you u.s. navy damage control school) turn the controller off, leave the hood on,shoot the bottleover the space between the hood and the vent out of the fec and then gradually work the nozzle down the vent pipe AND FOR GOSH SAKES DO NOT OPEN THE DOOR!!!!!!!! after that call cookshack for new gaskets, drink a beer cause it will take around 2 hours before you can open the fec door to be on the safe side.
by the way my verified 425f was hit using bbqersdelight 100% oak pellets.
