I did something dumb a couple days ago. I forgot to put foil over my fire box and the bottom of the smoker. I got home late, about 2am and really tired, anyway I put 2 briskets in and turned it on and went to bed. Needless to say its a mess now. Whats the best way to get it cleaned back up? Will it hurt to hose it out with water?

well I ended up spraying oven cleaner on it. Let it sit for a hour and wiped what I could off with a old rag. I sprayed it out with the water hose, and it got it real clean. so then I thought I would put a piece of wood in and burn off the oven cleaner and reseason it. I set it on 225 and within 30 minutes the temp was up to 275, lots of smoke. It stayed between 250 and 280 for 2 hours. you guys think I messed up my smoker with apraying it out withe the water hose? I was careful not to soak the probe or the element.

I would wipe it out, get all the chunks of stuff out. Jack and I use lemon juice to clean our smokers. Just apply straight lemon juice from the bottles, the cheap stuff, then wipe it off with wet towels or paper towels. You know it's food safe.
Did the brisket turn out good?

I know it's too late, but in case anyone else reads this NEVER use oven cleaner. It just has too much residual stuff. Yeah, it works in an oven, but in a smoker I don't recommend it.

You went for the full cleaning and water is okay, just make sure it doesn't get in the controls. And low pressure, too high will force the water where you don't want it to go.

When you clean it like that, you will have to re-season it.

I think you worried too much about the non-foil. Plenty of people use them without foil, they just use a scraper to get the stuff out.

Just get a cheap paint scraper (don't use it for paint) and scrape off the bad stuff.
I just put the oven cleaner on the cover over the firebox and on the bottom of the smoker. The Briskets did come out well. So, it wasnt a wasted effort. Tonight Im doing some chicken and gonna finish them off on the weber grill. Thanks for the replies. Only 3 months till football season. Go SOONERS!!!! cant wait till we hook them horns again, Its gonna be 6 more years till they win another shootout.
