I need a little advice, I would like to cook a beef brisket and a pork butt at the same time – will this be ok? And if so which one would go on top or does it matter? I am using a 08 smoker.
Frank, it does not hurt to cook pork and beef at the same time. The problem gets to be when you want to cook chicken with another meat at the same time.
Personally, I would put the brisket on top so as to use the pork to shield the bottom of the brisket while it is cooking. But I would also suggest that either way you cook it, I would switch the racks halfway through the cook.
Put the brisket fat side down under the butt. This will negate the need for switching positions. Use your temp probe for the butt. The point will need to go at least that long.
