Had a ripping grease fire a couple of weeks ago, toasted three nice thermo pen probes. Just realized maybe the FE probe got damaged to. Spent Saturday running the FE through all the temp settings with new thermo armoured cable probes, good for 650 degrees. I hung two of them alongside the builtin probe on the FE. Following is what I found, if there are two numbers it is because it was a range of settings, the low and the high

Dial Setting FE digital display Probe 1 Probe 2

Smoke 180 210 206
225 230/240 245/263 241/258
250 250 266 262
275 270/280 288/313 283/312
300 300/310 315/331 310/325
325 310/325 337/345 335/339
350 350 386 386
375 370 408/411 401/408
400 390/400 421/441 421/436
450 445 483 475

The FE digital display is consistantly reading lower than the actual temp inside the cooker. At lower temps it is around 15 degrees and at upper settings it is almost 40 degrees. Maybe this is why my chicken is black when I set it at 450 degrees for 40 minutes?

How much work is it to replace the FE probe? Does anyone know the material cookshack uses to seal the probe in the housing?

I think I will be running a thermopen probe inside the FE until I get the difference resolved. Always nice to know what temp you are cooking at.
