I ate at a place like that last night. It was a log cabin trailer made by Southern Yankee. A guy at work told me about it so I checked it out. It was a nice little rig. I have been mulling over the thought of doing something along that line.

By the way, if I'm buying, I think you should have to come down here to copy it. Smiler
peggy and i drove to anderson indiana 2 years ago to look at the southern yankee rig. owner is nice guy and worked for years at gm as an engineer. problem was our start up cost. went to nbbqa convention in atlanta this year. got cookshack sm150 and fec100. trailer came from www.trailer-tech.com After delays due to fab problems and hurricanes we got it last week.
nice unit 8 x 18 feet two serving windows, triple and hand wash sinks, 22 cu ft artic ait reefer and 7.2 cu ft artic air freezer, a/c, 3 well food steam table, 3 well food chilled, water heater, 5 foot hood cost was 23k.
now can some one tell me where in florida to find a generator so i can season my smokers and hit the comp circuit? just kidding i am calling a generator supply house in ohio tomorrow and they promise 3 day delivery lol

They didn't provide a generator? From their site it looks like they do with all their trailers. I see their 8X18 trailer with all the goodies is 28K. Are you including the price of your two smokers in that 23K or was that just the trailer without some of their equipment? Hope you don't mind the questions?
Prisonchef.....don't overlook the Honda EU3000is. It's quiet, electric start or recoil, and always starts in any weather. I've had mine for two years and it has never missed a beat. After going through three other generators in the 3000 watt range, there is no comparison. I can tell you from experience that there is nothing worse than working in an 18 foot trailer all day and having to shout to be heard. With the Honda you can carry on a normal conversation within three feet of it. I never realized how stressful generator noise was until I got the Honda. Congrats & good luck on your new venture.

I'll add an AMEN to the EU3000is.. it is quiet and very dependable.. like all Honda products.. The noise level may be of high importance in a mobile unit. If noise is not a consideration.. go for a less expensive Honda 3000. The 3000is is even quieter than the 1000is.. go figure.
weewilly and chateaubeyond,
ok here is what i have to powerup and maybe you guys can help me out.
coming out of the trailer are two 30amp 125 volt male 3 prong twist lock connectors.
one connector powers the 1/3hp water pump, on demand hot water heater, two double 4 foot flouresecent lights, 12,500 btu a/c and two outlets (unused)
other connector powers 3 well steam table, sm150, fec100, 22 cubic foot reefer, 7.2 cubic foot freezer and 5 foot hood.
best i can come up with is i need at least 7500 watts on each connector.
as much as i want a honda eu3000is i dont think it is enough.
i have been looking at a honda powered generator made by porter cable. this unit is inverter generator and rated as "clean power" suitable for electronics and computers.
i think i have my wattage figured correctly but i know from past experience both of you have a lot of knowledge in this area and any input from you would be most appreciated.
since there are no generators in florida i am ordering mine around 5pm est monday from a company in ohio and really cant afford to make a mistake on this one
thanks for your help

bama,
sorry it took me so long to reply.
the trailer we got was the TT818 custom. we have the following for equipment, 5 foot commercial hood,3 well steam table, 3 well chilled table,2 burner stove, 22 cubic foot artic air upright reefer, 7.2 cubic foot artic air chest freezer, an sm150,an fec100,of course we also have the a/c, water heater and pump.
the reason i am getting my own generators is that i can control the type of generator. i know the sm150 only likes "clean" power or i think it is called electronics rated. common sense told me that if the sm150 liked that so would the $900 dollar reefer and every other electrical component in our trailer. also i have had great luck with honda motors for reliabilty so i would only consider them as the power head for a generator. also the honda eu3000is came really highly recommended as you can see from the two other posts. from looking around i knew that porter cable offered inverter generators with honda motors and i really like their tools.
so to answer your question since a large part of my retirement money is tied up in this trailer i wanted complete control so i deleted the generators. but who would have figured that we we go thru 3 hurricanes Razzer

p'chef.. I don't think the 3KW will be enough for you.. no way.. first, it is more than enough for the A/C generally running.. but the startup draw of the A/C is pretty high.. off and on and off and on.. etc. So, starting would likely be close to 3KW... then you have lights and the draw form the heating tables.. unless they are propane.

Therefore, if you only have A/C and a few lights.. you can likely get by with it. If your heating tables are electric.. forget it.
