While perusing the ads in tne largest newspaper of the year (Thanksgiving day issue), I noticed a Burton Induction Cooktop with interface disk for $75 at the Tuesday Morning store (Amazon has an induction heater for $100 without the disk). It's rated for 120 V. I also found out that Burton offers a stove top smoker, but I don't know if I would want to go into that contentious subject.

Tuesday Morning also had a Varilux Cleanwave Sanitizing Wand for $25 (again Amazon has the wand for $70). Does anybody have any experience with these sanitizing wands? They use UV "light" at the C-band to supposedly kill off 99% of the bad bugs (including that nasty H1N1).

I'm curious if anybody has used either of these in a catering/mobile set up. The induction heater would come in handy if propane is not available (as well as being safer to use). I have a hunch a sanitizing wand would not pass muster with a sanitation inspector. They recommend taking a minute to scan a shopping cart handle with the wand before using the shopping cart, so it may not be quick enough to use in a concession application.

I've got one of the induction heaters and it works great, but I still prefer my $20 butane burner. The butane unit is foolproof and as long as I haven't forgotten my butane canisters, it will work. But the induction unit would be the way to go for home use without a doubt.

As for the UV wand, I can't see standing in front of an ATM or shopping cart for a full minute before I touch it. If you're that worried, use food service gloves or get some sanitizing packets and wipe everything down.
