He makes little batches and up to 500lb batches.

Jon is a great reference for grinders,stuffers,ingredients,etc.

Just waiting for my meat distributer buddy to make the ddrop on my boneless butts and I'm off to make sausage. I was going thru my list of things to get lined up and checking things off and thought some of those new into sausage making might benifit from a check list so I thought why not post mine. Add or delete what you need....hope this helps some out
