jerky/sausage rack

I'm making a rack to smoke sausage out of 3/8" stainless in my cs025. On the ends I was going to use 1x3 pine to get it higher, Will the pine cause off flavors? It's not getting heated above 180f thru the whole process. I would use oak but don't have any at the moment.
