A Cook last weekend at a Contest in Slidell, LA FEC 100 Cookingpellets.com Blend fuel, Temp in the 70's and hardly any wind. 5" elbow pointed down and somewhat backwards like about a 5 O'Clock Position.

Two Whole Angus Prime Briskets and Two Boston Butts.

Top Graph is Probe on Top Rack rear left side
Second Graph is attached on the Temp Probe Shield about an inch from FEC100 probe. Probes are within 1 degree of the FEC100 probe.

Stoker Snapshot

I had a very experienced cook look at the graph and he said something is wrong.

I think this hurt me this weekend becuase Briskets finished way too early and I had trouble getting Butts up to temp. FEC was set at 180 for two hours then 230.

I somewhat defended these swings in an earlier post and now don't believe that load or number of cooks is going to settle this.

I would like to say in advance, I'm not buying the story that your home oven swings more than that. It doesn't. Neither does my Kingfisher BT with wood log fuel.

Any Thoughts/Comments?
