KC Beef Loin

I have a slab of KC beef not yet cut into steaks I am thinking of cooking a hunk like a brisket any suggestions maybe a 4 to 5 lb piece.

Use part. Cook accordingly. Would most likely need less time. I use a remote thermometer Left overs make super sandwiches. Have also use the beef for pizza.
