Hi again everyone. I wanted to reintroduce myself. I took the class a few years back and bought an FEC 100 at the end of class. It has been an absolute pleasure to use ever since. Well, my friends and associates have finally convinced me to get into the catering/vending business (part-time for now), so I'm in the process of building a cabin/porch setup on an 8.5 x 20 flatbed. Since Cookshack's products and service are second to none, it is a no-brainer as to what cookers are going on the trailer. I'm probably going to sell my old FEC 100 and upgrade to a pair with the new controllers just for the holding features alone. In light of the inevitable breakdown, I also like the redundancy of having two cookers.

So with my head whirling from all the state health requirements and how that is going to affect my trailer design along with all of the usual questions, I just wanted to say "thank you" for having such a wealth of information on tap for someone like me to benefit. I'll try to read before asking a lot of questions.

If there's some absolute "must have" that will make my life 1000% easier, feel free to educate me. I'm all about getting new toys. LOL.
