I just bought a CS. I am very impressed...

One of the main reasons for buying the CS was to make my own summer sausage. I have quite a bit of goose meat and venison.

All of the recipes ask for ground pork. I can't find any ground pork that isn't "enhanced" with a 12% solution of something.

Will the "enhanced" pork work just as well?
Do I need to modify the recipe any?

Since you plan on making your own sausage, I would suggest that you invest in a grinder and grind it yourself.
Also write everything down to the minute detail....it will make sense as you go. I just got my smoker but have always cooked for the masses. I have always written everything down to either improve upon it or make changes for just a different taste.
