Since I got my 009 in April I've had the chance to cook numerous batches of jerky, brisket, pork butt, baby back ribs and pork loins. We entertained guests the last two weekends and the 009 did its magic. Two weeks ago it was a pork butt rubbed with Head Country seasoning. Cooked to 191 then foiled and put in a cooler for two hours. The pulled pork sandwiches got rave reviews from our guests. This weekend I did a packers cut brisket rubbed with Rib Stars Brisket Rub. Our guests all had seconds and thirds! The 009 is just too easy. I've definitely learned to keep the door closed and to trust my thermometer. The cooking times for my butts and briskets have varied by up to four hours, but the thermometer doesn't lie.
