Finally got to do some spares in my new Q'er. They took about 6 3/4 hours. That was longer than the ones done in my old 50. But they were very tasty. Sorry, they got eaten before I could get to my camera. Wonder if the fact that there is very little temp swing was the cause of the longer cook time?

The temp held within a degree or two the whole time. Opened at 5 hrs and at six to check doneness. The temp comes back up fairly quickly. I had two monitoring thermometers in the box and they agreed within a degree or two of the built-in one. The hold cycle works as advertised and dropped the temp to 140F. I saw the temp going down and it took me a minute to realize what was happening.

Cleanup is a snap. The fact that the wood box is completely removeable makes the bottom of the unit very accessable for clean-up and foiling. I think the wood boxes in all the models should come out like that.

It's nice to be able to put two full racks of St Louis cut spares on each shelf. There is plenty of room for eight full racks. Very nice feature.

Pork butts next and I'll try to get some pictures.

Your ribs sound great. I am doing some myself right now and I will post some pix later today. The ones I am doing are monsters, 4.5 lbs., and after reading your comment about cooking time I am wondering how long these big guys will take.

BTW, the wood boxes in all Cookshack smokers do remove completely.

I mis-spoke. I guess I should said the housing over the heating element instead of wood box. When the wood box/element cover slides out of the AQue, all that's left inside is the element and the guard around it. You can see and reach the bottom very easily. Make more sense?

We need to teach you how to trim those down to St. Louis, those are what we call "bronto" spares.

Oh, yes, I know what you mean. I like that about my AmeriQue, too. Easier to see where to clean.

All this talk about the AmeriQue is gonna make me have ta order one here REAL soon. I have this thing about having to have ALL the new stuff, I'm gonna go broke. Saw somewhere something about stainless racks for the AmeriQue any talk about when, cost ? By the way if this post's then I'm on again instead of off. Refer to the post "Hopefully".
