my temp probe reads higher while cooking than what I set it for as final cook temp...

my temp probe while cooking reads higher ie 171 than what I set it for ie 150... can that be correct? I thought it would slowing increase to the set temp and then turn off?

Need more details. If it is one of the CS probes, it can only read so low, not all the way down to cold meat temps.

What probe specifically?
