I have an opportunity to do have a vendor location on an access road to the Pennsylvania 500 this weekend. I am going to try selling pulled pork and spares along with beans and slaw for sides. I will be selling from Thursday to Sunday. I have a catering event on Sunday which is just a banquet style and I will only be dropping off the food. Any thoughts on this would be appreciated. Update on NACAR event... ok well I'm totally winging it on this one not sure of anything as far as quantities go. But then again I am totally new at this and the best way to learn sometimes is to just do it. I am doing pulled pork and chicken halves, I got what I thought was a good deal on whole chickens from BJ's wholesale club 0.60 cents a pound so I 1/2ed and 1/4ered them I bought 50 chicken at about a 3.5 and down weight. I am going to do spare ribs but am only selling them as a rib sampler which for me is 3 ribs beans and slaw for $7.25... butts are just about ready to come out they went in around 9:00AM it's 11:00 Pm now, some of the smaller ones are finished waiting for the big ones about another hour. I am going to pull half tonight and wrap the rest in film and foil for reheat tomorrow afternoon. I don't know if anyone else does this but when the butts come out I peel the fat off and set it aside pull the meat and then take the fat roll it up and ring it out like a towel into the meat, I find this is a great way to get some juice and flavor back in so it won't dry out. I am going to put in the ribs around 12:00 am and they should be done about 5:00...just enough time to catch a cat nap. This is actually my first time out in my new rig so I hope all goes well. I bumped the high limit switch again but I was glad I was right there to catch it. Chickens will go in tomorrow around 10:00 AM and should be done for lunch. I tried chicken for the first time just the other night and it was the juiciest I think I have ever had. Can't tell if I have enough product or not I would rather have a little to much then not enough. I will up date again later, this forum has really helped me by reading the posts and thanks again to those who have replied to my own in the past. Ken
