I wouldn't use a stone in an FEC, it won't get hot enough for Pizza's.

Most stones they tell you they need to be HOT, so in the 450 to 600 range is what I see recommended.

Just buy some unglazed tiles if you're only going to do them occassionally.

Also, don't make it too narrow around the sides or you'll restrict the airflow.

But an FEC and Pizza aren't made for it other, sure you CAN, but to me it's more a novelty than anything else.
Oh Pizza! I'v been down that road. And Smokin is correct.
I tried Pizza in my FEC. I started first putting a stone in an outdoor grill to do my crust on. After i got my crust fairly done I finished doing my toppings and put in the smoker. Results were so so when it finished but not great. If you want a good smoked Pizza here what I found out.
I got some pans that have holes in the bottom.
Made my pizza and put it in my litte red electric smoker I bought at Lowes back when I use to play around. The pans fit over the whole top and you can add all the wood you like for more smoke, and believe me it doesn;t take a lot for pizza. Takes about 45-60 minutes. They turn out unbelievable. I have done 30 or 40 I guess. We never get tired of them.
