Just a thought. I'd be careful about rubbing pork overnight. Depending on the rub, if there is salt, it could end up giving the PB a "hammy" taste (which is basically how you make ham, cover it with salt). The salt works as a cure that way.

My experience with doing PBs, is that the more bark you build, the more flavor that gets mixed in the finished product. I can't remember any time that I've put too much rub on, but I do recall a few times that I wished I had put on more rub,but to each his own.

4-5 hrs is no problem, but hey I'm from the school of KISS, so 45-60 minutes works for me. That way I can save the plastic wrap for FTC.
