First I mix up some sauce. I use 1 part virgin olive oil, 1 part lemon juice, 1 part soy sauce, & 1 1/2 to 2 parts dijon mustard. Last night I was in a hurry but I usually marinate the chicken for a hour in the sauce and during cooking I would apply more sauce one time toward the end of cook. I cooked the chicken over the direct side for 7 minutes each side at 200 to 225 and then I put them on the indirect side at same temp for another 15 minutes. After that, I turned it up to 400 to 435 for another 30 minutes on the indirect side & then they were done.

Thanks SmokinOkie for the tips. I definitely want to learn new ways to cook. I may experiment with some flavors to the sauce. This easy sauce is so good. My children love it. We use a little for dipping the chicken during the meal. So Good!!!
