Can anyone direct me to a site or two that describe the various cuts of pork and show where on the hog they each come from?
I would like to get some more knowledge about the different cuts of ribs and shoulders.

It's not the least expensive option, but if order a copy of the NAMP Meat Buyers Guide, you'll find it to be a valuable tool. It gives you specifics on each cut of beef, pork, lamb, and I think veal(my copy's at work, so I can't be sure about the veal).
Jack swears by the NAMP guide. I use it, too. A lot of times the stores make up something as a name for a cut of meat and I can get an idea as to what it really is and where it comes from. It's great to see where what I think is a big piece of meat is just a small part of the whole animal.
