maybe you are getting rained on a little bit. all that jumping around in price shouldnt happen so fast as the suppliers buy warehouse fulls at a time. prices are definitely increasing, though.
i paid 1.23 butts last week, at sams, butt only cause u.s. food didnt ship my order of butts claiming out of stock. would have been .99 through u.s. i pay 2.39 st louis. cheese, shouldnt be more than 2.00. have you ever tried roma foods? they have the best mozzarella in the world! they ship all over the country, based out of new york.
price jumping probably means the sales person is trying to make that fity... thats the kind of crap i got from sysco. u.s. has been stable so far, with little changes in comodities.
Last week I paid .85 for shoulders from US Foods when shipment arrived from US today they were out of stock Had to make a run to a local processing plant and paid 1.09 for case of shoulders. Used a case of butts from sams last week and the price was 1.19 Dont plan on doing that again but at the time I needed pork to cook

Funny thing - I went out to a local restaurant a little while back and the menu had prices stapled on the top of the menu that were $5 or more than the printed items on the menu below. (mostly steaks)

I asked the waitress what was going on - and she said the restaurant had started pricing steaks weekly due to the recent price swings in the market.

It's common in these parts to have "market prices" for lobsters, clams, etc. But now steak?
What's next, market prices for a Big Mac?
I sold hogs last week for $.57/ lb liveweight, 3 months ago $.45 , 6 months ago $.35. Raw milk is about double "normal" price now. Feed costs including corn and soy at about 150% year ago causing some farmers to let their barns go empty making a shortage and higher demand. I'm buying an aged angus brisket for $1.89, and when I run out of my own pork shoulders, I buy boneless ,netted berkshire whole shoulders for around $1.50 from a local USDA butcher shop. We like these briskets better than the frozen ones we bought from a wholesale distributer for the better flavor and they aren't as greasy. This is my first post in any forum,I usually just read what others write. GREAT WEBSITE!
