Put my ET732 probe in and it was reading 56 and FEC said 83
Now after 2.5hrs the Maverick says 97 and FEC probe says 107
They seem to be coming together - just don't want my PButt to fry overnight.
Cheers - will check in an hour or so and may switch to Cook Mode vs Probe Mode?
All probes have a temp range, typcially so that it will have a higher end you sacrific a little on the lower end might be around 100 (not sure)?

Don't know the minimum temp but does it matter? You won't be cold smoking in an FE because the temps can't be set that low. If the low temp is 140, then the probe should strart reading around that point.

As long as it matches the thermopen, just put it in, when it hits minimums it start registering.

Same problem with Maverick and many others on low ends, so do, so don't work.

If you're monitoring it this close, you should be able to tell what the temp range is.

Yes - that is what my post said I monitored them both and FEC probe off by 10 degrees (once it hit 100)
Agree that I don't need to know the low temp but it reads 79 degrees when meat is really only 35 degrees and then in 30 mins shows meat is 81 then something is wrong.
Will just call CookShack - just wondered if anyone knew the low reading as you stated.

Well regardless of probe temp readings the butts turned out amazing!
Ended up using the Mavericks temp reading (confirmed with Thermapen) and just set the probe to 210 (which equalled 195 on the ET-732). 23 hour smoke with 1 hour in the cambroSmiler
FEC100 burned roughly 5# of pellets at 200 (WOW!)
