Q in a small town

To tag onto topchef,good or a difference seems to work.

He would know about surviving and profiting,but we have three regional chains and three independents in a 1 mile radius,in a beach town,about 10,000 pop.

They all stay packed and the independents kick the chains' butts.

Tom, you still there? Micanopy, where Big Jim is, is less tha 13K........but the 2nd oldest town in America! Or so they say.
Big Jim can't keep up with the demand.! Good Q makes its place.
Well, there is a context. The university is only 12 miles away; the boondocks are getting colonized by yuppies; Micanopy is becoming an antique buyers destination. But still, it ain't down town Memphis.

good question tom, i own a bbq place in a food court of a mall in small town newton, kansas. it is a tough go, but catching on. also plan to open a "rollin rib cage" out of my motorhome to take to the customers. But was wondering if any of you have any good recipes for smoked cabbage? Have one and it is awesome, but wonder about more? email addy is rob8746@yahoo.com

I agree, a good Q will keep them coming in. I live in Lockhart, Texas (Central just south of Austin), and this town of 11,000 supports 4 LARGE BBQ restaurants. Build it, and they will come.

Them folks in Lockhart thinks briskets,yardbirds , "hot guts",an' Shiner's is the four basic food groups.

They got some mighty fine Q in your neck o' the woods.

You're right Tom, this is a BBQ lover's heaven...but a dieter's NIGHTMARE!!!

Our neck o' the woods would have to add pig to cover all the essentials.
