looking at the q on wheels for small biz.I have catered before and now that Im retired looking for something to keep me out of trouble.. what I need to know ....

1.Has anyone used one of these?
2 will it handle mixed foods chicken,ribs brisket,pork for 100 or so people if needed
3 what size smoker would Ineed to handle that ?
4 should I stay w/pelet type smoker
5 will it cook goin down the road without a problem ? any help would be great.....thx

They're very new on the market, so probably isn't much actual usage out there to report on.

You might want to start a thread in the pros forum, there are a number of caterers there.

Your answers:

1. No
2. Depends. Are you trying to cook all of those types, some of those types or just one of those at a time. Quantities for each of those is something you'll have to know. For catering are you trying to cook 4 briskets and 4 butts and 12 ribs and 30 chickens.. It's a guess for us, but you really need to figure out what you're going to be selling (business plan) so it can help steer you to the right capacity/style of smoker

4. My vote is yes, but it depends on #2 also
5. Why? Think business plan and how you want to cook/deliver. Also consider the health dept, they may have requirements about cooking on site or cooking at a commissary. Probably not the safe thing to do with any smoker, going down the road with a fire going.
