I have noticed on several bbq menu's bbq riblets. Does anyone on this forum serve them? My suppliers can't find this product in their books. In the Seattle area is a product called Pork Briskets which I understand it is the trim left when making St. Louis ribs. That would be a like the skirts with little or no bones. To me a riblet would be a short cut of spare rib bones. Any help would be appreciated. Merry Christmas.

Sorry, don't have a product number.

Riblets are nothing more than the trimmings left over from trimming spares down to St. Louis Spares.

A lot of people will buy full spares and trim them themselves (full spares being cheaper than trimmed) and sell the trimmings.
