Was at Costco and they had Prime Top Sirloin for $6.49lb. Asked for a 5-6 pounder and he came back with a 12 pounder still in cryovac for $3.99lb. Couldn’t resist so I took it. The thought was to cut in two, freeze half for later, but went all in.

210-225 degrees for roughly 4.5 hours until the internal reached 130 degrees.
