I have four rib racks and use them. They are a little hard to deal with, I prefer ribs lie flat.

Has anyone ever considered having an option of six shelves? The option would just include two new side slides and two more shelves. If I had six shelves I could put a whole case of baby backs on at one time all flat, I hardly ever need more than 18 racks.

I still would use the four shelf system for larger stuff of course, but I would think the six shelf system would make sense for lots of users.

You might take it up with Cookshack and see if they could work something out for you. I don't have a problem with the rib racks, but I have two FE100s. If I have to cook a large quanity of ribs, I can cook in one and use the other to glaze.

If you never cook more than eighteen racks at a time, you could use two rib rack to smoke and have two flat racks to glaze. Not all slabs are going to get done at the same time anyway. At least mine never do.

We had it done on one of our comp FEC s,because Craig also used it to cater some.

This was on one of the ramp models.

There can be concerns about airflow,and placement of the rack by the temp therm,high temp shutoff,and heat/drip shield.

Nothing that couldn't be worked out,but I'd talk to Eddie.

I have occasionally needed additional rack capacity when doing large quantities of ribs or, more often, if I am doing a bunch of smoked "hot wings" as appetizers or the main event. I ordered three additional racks and cut some 3" blocks from a 2x4 and use them as spacers sitting on top of the racks. This works great and you don't have to change out the shelf system.
Will give the new system its first use this next weekend for a Duck/Fresno State tailgater. Game time is 4:00pm so lots of time for beer, ribs and brisket. Cooking for some friends tailgater to so I will just get a case of ribs at Costco, 18 total for about $3.00 per pound, such a deal!

I plan on rotating the bottom two racks and the top two about 1 1/2 to 2 hours into the cook.
