I have a 260. when i'm smoking should the smoke bellow out or just wallow out of the top vent slowly.I use big chuncks of wood that seem to burn out in about 30-40 minutes at around 160F-180F Degrees.

What kind of wood are you using? Are you soaking it in water? I noticed you are in Tasmania. Did you get your smoker from Smo-King? Do you use it in a business or just for fun? Just curious.
You will get quite a bit of smoke in the first 30-45 minutes as the oven comes up to temp. Then the smoke will die down. A chuck of wood should last several hours and produce fresh smoke each time the elements come on.
