I've loved about everything I've cooked on my PG1000... but this might be the the best meal yet. I boned and skinned some thighs. Seasoned with EVOO, salt, pepper, oregano, basil and smoked for about an hour then finished on high heat on the grill. I built the lasagna with this chicken, sauteed mushrooms, and a sauce which was about half and half tomato based and alfredo sauce. There was a ton of Mozarella, Ricotta, Cottage cheese, and Parmesian as well. I cooked it covered at 350 for about 45min to 1 hour and then uncovered for about 15-30 minutes.

I thought the chicken, though it tasted great, might not have enough smoke flavor to carry the dish... I was wrong. Between the chicken and cooking this on the PG1000 I got plenty of GREAT but not overbearing smoke flavor.

Family loved it... Will be making this for a dinner party sometime.
