On a whim, I bought a 1 lb brick of pepper Jack cheese, and thouhj I'd try to smoke it.
I cut it in half lengthwise which gave me two 1"x1" x 4" pieces.
Smoked it with 75% apple 25% hickory.
I smoked it for about 45 minutes. I also turned the smoker off as soon as I saw smoke comming out the top, and turned it back on after it stopped. after 45 minutes it was up to 68F.
It ws 30F here this morning, so that helped.
It turned out great.
When you eat it, you get 3 distinct flavors.
First the smoke, then the cheese, then the peppers.
