I have been reading this forum and researching electric smokers.I have two questions.Cookshack is offering a water pan as an option with the new 025, reading through new owners forum many say"do not use a water pan" open the door to let out the moisture. Water is not needed because of the efficincy of electric.2nd I have also read that when useing a water pan, add fruit, onions,spices,small mammels,etc to enhance the flavor.As a newbe I am lost. Any help greatly appreciated guys& gals
